Mama's Lasagne

I'm not just gushing when I say that my mom makes the best home-made lasagne. I'm being 100% serious. My mom used to cater big events for people like weddings and such. So when I say my mom's the best cook ever, it's an understatement. Anyway, this is her recipe, not mine, but it's definitely one that will be passed down from mother to daughter. :) I LOVE COMFORT FOODS!!

What you'll need:
2 lbs lean ground beef
2 c or so grated mozzarella
1 medium sized carton cottage cheese
12 lasagne noodles
1 jar spaghetti sauce
2-3 cloves garlic, minced

Brown ground beef. Add minced garlic. Pour in spaghetti sauce and let it simmer until the lasagne noodles are still cooking. (Beware of snatchers at this point!) In a 13x9 pan, line bottom with 4-5 noodles, slightly overlapping one another. Layer on 1/2 of the ground beef. Cover with whole container of cottage cheese. Layer a good amount of cheese on top. Layer 4-5 more lasagne noodles (some always seem to break, so it's good to have a few extras, just in case) then pour over the rest of the ground beef. Top off with more cheese, and bake on 350 degrees for about 20 minutes, just until the cheese is melty and gooey. Pure deliciousness. Bon Appetit!

What's For Dinner?

One of my really good friends started a dinner blog, with some of the cheapest meals I've ever seen. I was pretty jealous of it, so I admit, I copied her idea! I absolutely LOVE to cook; a trait that I definitely get from my mom, who has been catering for all sorts of occasions for as long as I can remember. So here is a blog dedicated to all the foods I love, recipes included. :)

Chicken Ziti Bake

So I've somewhat switched this one up.. I'm seriously the queen of tweaking recipes to make them better for me and my family. Here's a yummy meal that is easy and comforting to eat. :)

What you'll need:

2-3 Chicken breasts
1 cup of cheese (mozzarella and parmesan-or whatever you have on hand)
1 box of ziti noodles
Bread crumbs
Spaghetti sauce
Alfredo sauce

Grill chicken. Dice up into little bite-size chunks. Toast the bread crumbs in a pan with a touch of EVOO (olive oil). Cook pasta al dente. Not too soft, because the oven will continue to cook the noodles. Add the diced chicken, and 1/2 of the cheese. In a saucepan, mix spaghetti sauce and alfredo half and half, so it makes a creamy sauce. In a baking dish, pour in noodles, cheese, and chicken mixture. Pour the spaghetti/alfredo sauce on top. Layer the last half of the cheese. Top with toasted bread crumbs. Place in a 350 degree oven and bake until cheese is melted and bubbly.

Also, here's a recipe for the best garlic bread you will ever have in your LIFE.

You'll need:

1 loaf French bread
1 c softened, room temperature butter
1/2 c parmesan cheese
2 tbs parsley flakes
1 tbs garlic powder
Pinch of garlic salt

Preheat oven to 350 degrees. Cut the french bread in half lengthwise; like a hot dog bun. Line a cookie sheet with tin foil. Mix ingredients together, and spread over both halves of the bread. Place onto cookie sheet, and bake for 15-20 minutes. YUM!
